Shredded Chicken Tacos

Today's recipe is one of my favorites...it's easy, and super delicious!

Aaaaaaaaa-aaand, it's just in time for Cinco de Mayo!

Woot!


Cinco de Mayo is one of those holidays people either REALLY celebrate, or...they don't. 

I'm one of those people who really celebrates it.


It used to be a big deal in my family...tamales, margaritas, enchiladas, the whole nine yards. :D

Now, it's my office that celebrates it. Yes, it's just an excuse to eat a TOOO-OON of carbs. Whatev.


So, in preparation for the fiestas taking place this week and/or weekend, I've got a couple recipes for you, starting with homemade taco seasoning and shredded chicken tacos.

You'll never find an easier (or tastier) recipe for tacos, try them! 




For the homemade taco seasoning, gather up your spices: oregano, salt, pepper, crushed red pepper, cumin, chili powder, garlic powder, and onion powder. Pretty, huh?



Whisk them together:



Ta-daaa! That's it! Super tasty (and spicy) and no preservatives! Win.



Now, for the chicken, you'll need (don't lose me, it gets complicated) taco seasoning, chicken...and salsa. Everyone with me?



Wash and set the chicken in a crock pot (mine is army size, but any will do...seriously, why did i get such a huge crock pot? Ahh! I digress.)



Pour in the taco seasoning:



And the salsa:



Cook it on high for 4-6 hours, ooooor 6-8 (if you need to do grown-up today things like work. Boooo.)

Then, shred the chicken with a fork and assemble your tacos. Yes, mine looks like a four-year-old made it.....ahem.

Homemade Taco Seasoning

Yield: About 2 tablespoons (enough to season about 2 lbs of meat)
Prep Time: 5 minutes

Ingredients:


1/2 tablespoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/4 teaspoon paprika
1 teaspoon ground cumin
3/4 teaspoon salt
3/4 teaspoon black pepper

Directions:

Whisk ingredients together. Use with chicken or beef for tacos or enchiladas. 

Enjoy!



Shredded Chicken Tacos

Yield: 10 servings
Prep Time: 15 minutes
Cook Time: 4-6/6-8 hours

Ingredients:

Homemade Taco Seasoning
1 16 oz. jar of medium salsa
4 boneless skinless chicken breasts

Directions:

Lay chicken in crock pot. Pour taco seasoning and salsa over the chicken. Cook on high for 4-6 hours or low for 6-8 hours. 

Shred with a fork.

Serve and enjoy!

Peanut Butter Cookies

I haven’t written an intro post for Baguettes &Breadcrumbs, but to sum up the purpose of this blog, I’m hoping to create a space for favorites…I don’t know about you, but these days, whenever I need anything, my first stop on a product/recipe search is the internet…specifically the blogosphere.

(Oh haaaaaay, millennial words)  :)


I look for reviews of products and recipes, and I’ve found blogs to be great resources for all kinds of needs.

Through B&B, I hope to share my recipe, travel, and product experiences with you (along with some quirky anecdotes…seriously, some days my life is a bad sitcom). I love cooking, reading, all things related to make-up, clothes, gardening, traveling, and photography.



Over the next few weeks, I’ll be posting some pretty “staple” recipes.

Cuz, let’s be honest, when you’re learning how to make toast, it’s probably not the time to start exploring the how-to’s of a Poularde de Bresse Truffee en Vessie.


Yeah. That exists.


And I’m the person learning to make toast.


Ok, perhaps that was a slight exaggeration…but I’m no chef.

I’m not an expert; I have minimal experience in the kitchen. My mom is like a lot of moms out there. She’s a fantastic cook. However, when I asked for some of her recipes, her response went something like this,

“Oh! That’s easy! You just take blah blah, and just throw in some onion, add some milk, you know, however much you want. Then just add the spices, doesn’t matter how muchit’ssoeasyanyonecanmakethisdishandblahblahblahblahblah….”


MOTHER!!


That. is not. a recipe.

As much as I love her cooking, I have yet to be able to reproduce her “audio” recipes. Nope.

She cooks without measurements, and that just doesn’t work for me.

The first time I tried to add spices  “to taste” I shook the spice jar over the spaghetti sauce ONCE and the lid came off. Needless to say, that was some SERIOUS old school spicy spaghetti sauce.

So yes. I measure. Yay, teaspoons!

Today, I’ve solved one of life’s great mysteries: how to create delicious peanut butter cookies WITHOUT shortening.

Crisco, I love you.

My stomach holds fond childhood memories of peanut butter cookie goodness thanks to you.


But we need to end things.


I’m sorry, but this is where we part.


I don’t know about everyone else, but I’ve had a time trying to find a good recipe for these cookies that isn’t dry, crumbly, etc.


But people? I’ve found it.


In fact, I found TWO!! :D

The first recipe is more in depth. It has flour and quite a few ingredients. But the cookies are divine! They are puffy and have a cake-y consistency.



The second is a faster recipe to throw together, and the cookies are SO good!

They’re a little more buttery tasting than the first recipe.

You shall love them.


I HIGHLY recommend both.

Please try them! You won’t be disappointed.



For the first cookies (soft and cake-y), start with some flour:



Add baking soda, baking powder, salt, and whisk it together:





In a different bowl, mix butter and peanut butter together:



Add in eggs,



and some milk,



and vanilla!



Mix together! (My poor puppy was DYING, the peanut butter smell was so strong.)



Grab some white sugar for flattening the cookies:



You can use a fork or a spatula (depending on the look you want). Wet the spatula and dip in the sugar. Then, flatten the cookies and bake:



Cool the cookies on the sheet for 1 minute, then on a cookie rack for 5:



Ta-daaa! Enjoy!

As I said, the first recipe is so good, but this next one goes a little faster. Still delish, though! Perfect if you don't have a lot of time!



Start with peanut butter:



Add some light brown sugar:



and some white sugar:



Mix those ingredients together



Then, add in eggs,




baking soda,



and some kosher salt:



Mix the dough together!



Roll the dough into balls and flatten with a fork dipped in sugar:




Bake and enjoy!!

Peanut Butter Cookies

Yield: 36 cookies
Prep Time: 15 minutes
Cook Time: 10-12 minutes
Nutrition: Serving Size - 1 cookie * Calories: 114 * Fat: 8g * Sat. Fat: 5g * Cholesterol: 26g * Sodium: 89mg * Potassium: 18mg * Carbs: 10g * Fiber: 0g * Sugars: 7g * Protein: 1g * Iron: 9%


Ingredients:

1 1/4 cups all purpose flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup peanut butter (I used smooth)
3/4 cup sugar
1/2 cup firmly packed light brown sugar
1 large egg, at room temperature
1 tablespoon milk
1 tsp vanilla extract
Extra sugar for sprinkling/flattening


Preheat oven to 350 degrees. 

In a medium bowl, whisk flour, baking soda, baking powder, and salt. Set it aside.

In another bowl, beat the butter and peanut butter together until fluffy. Add sugars and beat until smooth. Add the egg and mix. Add the milk and vanilla extract. 
Add the flour mixture and stir together. 

Pour sprinkling sugar onto a plate. Wet a fork or spatula and dip into sugar.  Roll dough into balls and flatten with fork or spatula on an ungreased baking sheet.  

Bake for 10 to 12 minutes. DO NOT over bake. They might look like they're not done, but they are. 

Cool cookies on baking sheet for 1 minute, then on cookie racks until completely cool.

Notes:
I baked these for a bit too long at 11 minutes. I think 10 would have been perfect.

Peanut Butter Cookies

Yield: 36 cookies
Prep Time: 10 minutes
Cook Time: 10-12 minutes
Nutrition: Serving Size - 1 cookie * Calories: 139 * Fat: 10g * Sat. Fat: 7g * Cholesterol: 37g * Sodium: 173mg * Potassium: 28mg * Carbs: 12g * Fiber: 0g * Sugars: 12g * Protein: 0g * Iron: 5%

2 cups creamy peanut butter
1 cup packed light brown sugar
1 cup granulated sugar
2 large eggs
2 teaspoons baking soda
1/2 teaspoon kosher salt

Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper. In a large bowl, mix together the peanut butter, sugars, eggs, baking soda, and salt until smooth.

Shape the dough in balls and place 2 inches apart on baking sheets. Using a fork dipped in sugar, flatten each cookie.

Bake for 10-12 minutes, rotating baking sheet halfway through baking time, until puffed and golden brown. The cookies will deflate as they cool.

Cool slightly on the baking sheets, then transfer to a wire rack to cool completely.

Lemon Poppy Seed Muffins



Does anyone ever have one of those days where the show “Chicago” really sings to your heart?


I’m talkin’ in the, “HE HAD IT COMIN’!!!” sense.


Anyone?


I have a human I’m around often who doesn’t talk. He broadcasts.


To space.


Not the office kind. The NASA kind. (No, it’s not my husband. We wouldn’t have made it that far.)

He means well, but he could mean well 20 decibels lower.

(Speaking of my husband: Yes, Engineer, I understand the “20 decibel” thing is inaccurate. I’m ranting. The laws of the universe don’t apply in this scenario.)


In addition to the THX Experience, when he approaches me it’s often in the, BAM!!! IN YOUR FACE sense.

He’ll come around the corner (usually as I’m about to enjoy a nice cup of coffee, the birds are chirping, the sun is out, it’s quiiiiiiiiet…..) and say something liiiike, “OH MAN! Can you BELIEVE BLAH BLAH BLAH?!?!! Ha-HA!!! Isn’t that CRAZY?!?!”


I have told him I’m not responsible for the things I say in response.


It’s like the knee-tap at the doctor. Innately…just….a reflex.



But seriously.


SERIOUSLY.



I have yet to find a good way to deal with this human.

It’s a work in progress.

So, until then, I shall play “Cell Block Tango” and just stuff my face with muffins. Delicious, atomic-bomb-in-human-form forgetting muffins.

Super easy, you can whip them up for breakfast or a snack (or sedative ;)).


  

Start with your sugar….mmmmmm, and rub it with lemon zest. You want to moisten the sugar and
get rid of the zest clumps.






Once that’s done, whisk in the flour, baking powder, baking soda and salt. Set that aside.
 





Whisk the Greek yogurt (or sour cream) and eggs…




Mix in the vanilla, lemon juice and melted butter together until well blended.





Combine the dry and wet ingredients. NO overmixing allowed!



  
Add your poppy seeds, and put into muffin cups:



Bake and cool. MAKE SURE TO COOL COMPLETELY BEFORE FROSTING!

Mix your icing together and drizzle over the top of the muffins.

Lemon Poppy Seed Muffins

Yield: 12 muffins
Prep Time: 10 minutes
Cook Time: 18-20 minutes
Nutrition: Serving Size - 1 muffin * Calories: 251 * Fat: 9g * Sat. Fat: 5g * Cholesterol: 61g * Sodium: 170mg * Potassium: 60mg * Carbs: 47g * Fiber: 1g * Sugars: 32g * Protein: 5g * Iron: 32%

 

Ingredients:


For the Muffins:

2/3 cup sugar
Grated zest and juice of 1 lemon
2 cups Gold Medal all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup sour cream or plain Greek yogurt
2 large eggs
1 teaspoon pure vanilla extract
1 stick unsalted butter, melted and cooled
2 tablespoons poppy seeds

For the Icing:
1 cup confectioners’ sugar, sifted
2-3 tablespoons fresh lemon juice (1 lemon)


Directions:

1. To Make the Muffins: Center a rack in the oven and preheat the oven to 400 degrees F. Butter or spray the 12 molds in a regular-size muffin pan or fit the molds with paper muffin cups.


2. In a large bowl, rub the sugar and the lemon zest together with your fingertips until the sugar is moist and the fragrance of the lemon is strong. Whisk in the flour, baking powder, baking soda and salt. In a small bowl, whisk the sour cream or Greek yogurt, eggs, vanilla, lemon juice and melted butter together until well blended.


3. Pour the liquid ingredients over the dry ingredients and gently stir to blend. Don't overmix. Stir in the poppy seeds. Divide the batter evenly among the muffin cups.


4. Bake for 18 to 20 minutes, or until the tops are golden and a thin knife inserted into the center of the muffins comes out clean. Transfer the pan to a rack and cool for 5 minutes before carefully removing each muffin from its mold. Cool the muffins completely on the rack before icing them.


5. To Make the Icing: Put the confectioners’ sugar in a small bowl and add about 1 1/2 tablespoons of the lemon juice. Stir with a spoon to moisten the sugar, then add enough additional lemon juice, a dribble at a time, to get an icing that is thin enough to drizzle from the tip of the spoon. Drizzle glaze over the muffins. Serve.
